Description

Cheddar Bay Chicken Cobbler is a savory, comforting casserole loaded with creamy chicken, vegetables, and topped with cheesy biscuit topping baked to golden perfection.

Ingredients

2 cups cooked, shredded chicken

1 packet Cheddar Bay Biscuit mix (plus ingredients listed on packet)

1½ cups milk

1 cup chicken broth

1 cup frozen mixed vegetables

½ cup sour cream

1 can cream of chicken soup

1 tsp garlic powder

½ tsp black pepper

1 tbsp fresh parsley (optional)

1½ cups shredded cheddar cheese

2 tbsp butter (melted)

Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In a large bowl, whisk together milk, sour cream, and cream of chicken soup until smooth.

3. Stir in garlic powder, black pepper, frozen vegetables, and shredded chicken.

4. Pour the chicken mixture into the prepared baking dish and spread evenly.

5. In a separate bowl, prepare the Cheddar Bay biscuit mix according to the package. Stir in shredded cheddar cheese.

6. Drop spoonfuls of biscuit dough evenly over the chicken mixture.

7. Drizzle melted butter over the biscuit topping and sprinkle with parsley (if using).

8. Bake for 40–45 minutes or until biscuits are golden brown and cooked through.

9. Let sit for 5 minutes before serving so the cobbler can settle.

Notes

Perfect for leftovers: Great use for cooked chicken or turkey, including rotisserie.

Don’t overmix the biscuit dough – it’ll stay fluffier.

Garlic powder vs. fresh garlic: Use powder for smoothness, fresh for stronger flavor.

Test doneness of biscuits with a toothpick in the center.

Let rest before serving to thicken the filling and allow flavors to settle.

Freezer-friendly: Can be made ahead and reheated.

Healthy swaps: Try Greek yogurt for sour cream, reduced-fat cheese, and extra veggies like mushrooms or spinach.

Pairs well with: A light green salad or steamed veggies like broccoli or asparagus.
