Ingredients
1 head cauliflower, cut into florets
1 head broccoli, cut into florets
1 tbsp olive oil
½ cup chopped onion
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ cup sour cream
¼ cup mayonnaise
½ cup milk
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
½ cup cooked crumbled beef (optional)
¼ cup green onions (optional)
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. Steam broccoli and cauliflower until tender, then drain well.
3. Sauté onion and garlic in olive oil until softened.
4. In a large bowl, mix vegetables, sautéed onion and garlic, cheeses, sour cream, mayonnaise, milk, and seasonings.
5. Transfer mixture to the prepared baking dish and top with beef and green onions if using.
6. Bake for 20–25 minutes until bubbly and lightly golden.
Notes
Let the casserole rest for 5 minutes before serving. Leftovers can be stored in the refrigerator for up to 3 days.
