Description

Walking Taco Casserole is a fun, family-friendly baked dinner made with seasoned ground beef, beans, melty cheddar cheese, and crunchy Fritos, delivering all the flavors of a walking taco in an easy oven-baked dish.


Ingredients

2 tsp olive oil

1 lb ground beef

1 white onion, diced

2 cloves garlic, minced

1 package (1 oz) taco seasoning

1 can (10 oz) Rotel (tomatoes with green chiles)

1 can (16 oz) pinto beans, drained

1 cup water

1 1/2 cups shredded cheddar cheese

1 bag (9.25 oz) Fritos

Optional toppings:

Sour cream

Diced tomatoes

Green onions


Instructions

1. Preheat oven to 350°F and spray a 9×13-inch baking dish.

2. Heat olive oil in a skillet and cook ground beef and onion until browned.

3. Add garlic and cook briefly until fragrant.

4. Stir in taco seasoning, Rotel, pinto beans, and water; simmer until thickened.

5. Layer half the Fritos in the baking dish, followed by the meat mixture, cheese, and remaining Fritos.

6. Bake for 15 minutes until the cheese is melted.

7. Top with sour cream, tomatoes, green onions, or desired toppings before serving.

Notes

For extra crunch, add some Fritos after baking.

This casserole pairs well with a simple green salad.
