Savory Butternut Squash and Garlic Herb Steak Bowls are a hearty, wholesome dinner made with roasted squash, perfectly seared steak, and fresh herbs for bold, comforting flavor.

Ingredients

1 medium butternut squash (about 2 cups cubed)

1 lb sirloin or ribeye steak

4 cloves fresh garlic, minced

2 tablespoons extra virgin olive oil

2 sprigs fresh rosemary, chopped

2 sprigs fresh thyme, chopped

Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Peel and cube the butternut squash into bite-sized pieces, then toss with olive oil, salt, and pepper.
  3. Spread the squash evenly on a baking sheet and roast for 25–30 minutes until tender and golden brown.
  4. While the squash roasts, season the steak with salt, pepper, chopped rosemary, and thyme. Let it rest at room temperature for 15 minutes.
  5. Heat a skillet over medium-high heat with a drizzle of olive oil and sear the steak for 4–5 minutes per side, or until desired doneness.
  6. Remove the steak from the skillet and let it rest for several minutes before slicing.
  7. Assemble bowls by layering roasted squash on the bottom, topping with sliced steak, and finishing with minced garlic.

Notes

Letting the steak rest before slicing helps keep it juicy. For extra flavor, drizzle with pan juices or a little extra olive oil before serving.
