Description

Creamy Vegetarian Gnocchi Soup is a cozy, comforting one-pot meal made with pillowy gnocchi, tender vegetables, and a rich, creamy broth. Perfect for weeknight dinners.


Ingredients

1 Tbsp olive oil

1 onion, diced

2 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

6 cups vegetable broth

1 cup heavy cream (or coconut cream)

16 oz package of gnocchi

2 cups fresh spinach

Salt and pepper to taste

Fresh parsley or basil for garnish


Instructions

1. Heat olive oil in a pot. Sauté onion, garlic, carrots, and celery for 5–7 minutes.

2. Add vegetable broth and bring to a boil, then reduce to simmer.

3. Add gnocchi and cook 2–3 minutes (until they float).

4. Lower heat, stir in cream. Do not boil.

5. Add spinach, cook until wilted. Season with salt and pepper.

6. Serve with garnish of parsley or basil.

Notes

Use coconut cream for a dairy-free version. Best served hot and fresh, but leftovers can be stored in the fridge for up to 3 days. Reheat gently to avoid separating the cream.
