Creamy Chicken Macaroni Cheese Soup is a cozy, comforting dinner made with tender chicken, hearty vegetables, elbow macaroni, and a rich, cheesy broth.

3 cups cooked chicken, shredded

4 tbsp butter

1 onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

½ tsp dried thyme

½ tsp smoked paprika

¼ tsp mustard powder

¼ cup all-purpose flour

6 cups chicken broth

2 cups whole milk

1 cup heavy cream

1½ cups elbow macaroni

4 cups sharp cheddar cheese, grated

½ cup Monterey Jack cheese, grated

Salt and pepper, to taste

Optional: fresh parsley, chives, turkey bacon, croutons

Instructions

  1. Cook and shred the chicken, then set aside.
  2. Sauté onion, carrots, celery, and garlic in butter until softened.
  3. Stir in thyme, smoked paprika, mustard powder, and flour to form a roux.
  4. Gradually whisk in chicken broth, milk, and heavy cream until smooth.
  5. Reduce heat to low and melt in cheddar and Monterey Jack cheeses.
  6. Cook macaroni separately until tender, then add to the soup.
  7. Stir in chicken, simmer gently, and garnish as desired before serving.

Notes

Keep heat low when adding cheese to prevent curdling.

If the soup thickens too much, add a splash of broth or milk when reheating.
