Easy Vegetable Beef Soup is a quick, family-friendly recipe made with lean ground beef, simple seasonings, and frozen vegetables simmered in a savory tomato-beef broth.

1 lb lean ground beef

1 small onion (finely chopped)

1 tsp garlic powder

1 tsp dried basil

1 1/4 cups beef broth

1 (15 oz) can tomato sauce

1 1/2 cups frozen mixed vegetables

1 1/2 cups frozen corn

1 tbsp soy sauce

1 tbsp molasses

Instructions

  1. Thaw frozen vegetables slightly.
  2. Cook ground beef with onion, garlic powder, and basil until browned, then drain excess fat.
  3. Add beef broth, tomato sauce, vegetables, soy sauce, and molasses.
  4. Bring to a boil, then reduce heat and simmer for 15–20 minutes, stirring occasionally.
