French Onion Pasta is a rich, comforting dish inspired by classic French onion soup, featuring deeply caramelized onions, savory herbs, tender pasta, and melted Gruyere and Parmesan cheeses in a creamy, flavorful sauce.

Ingredients

3 tbsp olive oil

2 tbsp butter

3 large yellow onions (1/8-inch rings)

4 garlic cloves, minced

1/8 tsp salt

1/8 tsp pepper

Red pepper flakes

1 tbsp Worcestershire sauce

1 tbsp reduced-sodium soy sauce

5½ cups water

12 oz can evaporated milk

½ tbsp cornstarch

2 tbsp beef bouillon

Parsley

Thyme

Oregano

Paprika

Black pepper

1 lb orecchiette (or other short pasta)

5 oz shredded Gruyere cheese

¼ cup shredded Parmesan cheese

Instructions

  1. Caramelize onions in olive oil and butter over medium-low heat for 30–35 minutes.
  2. Add garlic, Worcestershire sauce, soy sauce, and spices; cook for 30 seconds until fragrant.
  3. Add water, evaporated milk, cornstarch, bouillon, and herbs, stirring to combine.
  4. Bring to a boil, add pasta, and cook directly in the sauce until al dente, about 20–25 minutes.
  5. Stir in Gruyere and Parmesan cheeses until melted and creamy, then adjust seasoning to taste.

Notes

Stir frequently while cooking the pasta to prevent sticking and ensure a smooth, creamy sauce.
