Easy Low Carb Chicken Casserole is a quick, creamy comfort dish made with tender chicken, wholesome vegetables, savory turkey bacon, and melted cheese all baked together in a rich ranch sauce. It’s perfect for busy weeknights and meal prep.

5 cups broccoli florets or 1 lb spinach, thawed and drained

8 slices cooked turkey bacon, chopped

4 cups cooked chicken, shredded or diced

3 cloves garlic, minced

½ cup shredded mozzarella cheese

½ cup shredded cheddar cheese

1 cup ranch dressing

½ cup shredded mozzarella cheese (topping)

½ cup shredded cheddar cheese (topping)

Instructions

  1. Preheat oven to 375°F.
  2. If using broccoli, blanch for 1–2 minutes; if using spinach, drain thoroughly.
  3. In a large bowl, combine chicken, turkey bacon, vegetables, garlic, ranch dressing, mozzarella, and cheddar.
  4. Transfer the mixture to a greased 9×13-inch casserole dish.
  5. Top evenly with remaining mozzarella and cheddar cheese.
  6. Bake for about 15 minutes, until hot and bubbly.
  7. Let cool slightly before serving.

Notes

Be sure to drain vegetables well to avoid excess liquid.

Store leftovers in the refrigerator for up to 4 days.
