Pineapple Chicken and Rice is a sweet and savory skillet meal made with tender chicken, juicy pineapple, and fluffy rice tossed in a glossy, flavorful sauce.

Ingredients

1 lb chicken breast (diced)

2 tbsp olive or sesame oil

2 garlic cloves (minced)

1/2 cup soy sauce

1/3 cup pineapple juice

2 tbsp honey or brown sugar

1 tbsp rice or apple cider vinegar

1 tsp cornstarch + 1 tbsp water

1.5 cups cooked rice

1 cup pineapple chunks

1/2 red bell pepper (diced)

1/4 cup green onions (chopped)

Sesame seeds, red pepper flakes (optional)

Instructions

  1. Sauté the diced chicken in oil until fully cooked, then set aside.
  2. In the same pan, sauté the garlic briefly until fragrant, then add the soy sauce, pineapple juice, honey, and vinegar.
  3. Stir in the cornstarch slurry and cook until the sauce thickens.
  4. Add the cooked chicken, pineapple chunks, and diced bell pepper to the pan.
  5. Stir in the cooked rice and heat until everything is well combined and warmed through.
  6. Garnish with green onions, sesame seeds, or red pepper flakes if desired, then serve.

Notes

Use leftover or day-old rice for best texture.

Adjust sweetness by adding more or less honey or brown sugar to taste.
