Copycat Sweet Fire Chicken is a quick and easy takeout-style dinner made with crispy chicken, sweet pineapple, tender peppers and onions, all coated in a sticky sweet chili sauce and served over rice.

1/2 lb frozen chicken nuggets or popcorn chicken

1 tbsp cooking oil

1/3 cup diced red bell pepper

1/3 cup diced onion

1 cup pineapple chunks

1/3 cup Thai sweet chili sauce

23 tbsp pineapple juice

Steamed rice

Instructions

  1. Bake chicken nuggets according to package directions.
  2. Heat oil in a skillet over medium heat.
  3. Sauté red bell pepper, onion, and pineapple for about 2 minutes.
  4. Add sweet chili sauce and pineapple juice and bring to a gentle boil.
  5. Add cooked chicken and stir until evenly coated and heated through.
  6. Serve over steamed rice.

Notes

This dish is best served immediately while the chicken is crispy.

Adjust the sweetness or heat by adding more pineapple juice or chili sauce.
