Unstuffed Cabbage Roll Casserole is a comforting Italian-inspired dinner made with tender cabbage, savory ground beef, rice, tomato juice, and layers of melted cheese—all the flavor of cabbage rolls without the work.

Ingredients

10 cups chopped savoy cabbage (about 3/4 large head)

1 1/2 lbs ground beef

1 onion, diced

1 carrot, diced

1 celery stalk, diced

2 garlic cloves, minced

1 cup parboiled rice

4 cups tomato juice (V8 preferred)

1/2 cup grated Parmigiano

3 cups shredded mozzarella

1/4 cup fresh parsley

Salt

Black pepper

Red pepper flakes (optional)

Instructions

  1. Boil chopped cabbage for 2 minutes. Drain well and set aside.
  2. Brown ground beef in a large skillet, then add onion, carrot, celery, and garlic. Cook for 5 minutes.
  3. Add tomato juice and rice. Simmer for 5 minutes, then mix in Parmigiano and parsley.
  4. In a greased 9×13-inch baking dish, layer cabbage, meat and rice mixture, and mozzarella. Repeat layers.
  5. Top with remaining tomato juice and mozzarella.
  6. Cover and bake at 350°F for 1 hour.
  7. Uncover and bake an additional 15 minutes until bubbly.
  8. Let rest 15 minutes before serving.

Notes

This casserole tastes even better the next day. Leftovers store well in the refrigerator for up to 4 days.
